Herb-Roasted Delicata Squash


Delicata squash pairs well with bold herbs and spices, like sage, thyme, rosemary, cinnamon, ginger, or nutmeg. Similar to other winter squash, delicata squash is a wonderful source of vitamin A, vitamin C, and potassium.
 


Simplicity: easy

Time Consuming: 30 minutes

Taste: salty

Recommendation: if you can not find in your area delicata squash, replace it with butternut squash.

Ingredients: 

  • 2 delicata squash
  • 1 tablespoon olive oil
  • 1 tablespoon fresh sage, thinly sliced
  • 1 teaspoon dried thyme, roughly chopped
  • Salt and pepper to taste

Steps:

1- Preheat oven to 400°F.  

2- Remove ends from squash then cut in half longways. Scoop out the seeds and slice the squash into 1/2- inch slices (like moons).

3- Combine squash, herbs, olive oil, salt, and pepper in a bowl and toss to combine.  

4- Place the mixture on a baking dish in a single layer.  Roast for 15 minutes, flip the squash, and roast for another 10-15 minutes or until tender.  Serve.
